A very delicate product that should be consumed as soon as it is made, perhaps devoured in the place of production amidst the aromas of lactic ferments and stables, but which ends up facing very long journeys and if not treated with due care is exposed to sudden spoilage.

If made with cow's milk, a 100-gram mozzarella contains about 250 calories, while buffalo mozzarella has only 20-25 more. For the animal fat content, it can be consumed twice a week for a balanced diet. It contains a source of noble proteins, minerals such as calcium, phosphorus, zinc, potassium, and many vitamins: A, D, and E, and those of the B group.

Mozzarella is a product appreciated in all markets. In Italy as well as abroad. It seems incredible but it is possible to buy it in France, Germany, the United Kingdom, the Netherlands, the United States, and in Eastern European countries such as Poland, Bulgaria, Romania, and Greece. According to the Consorzio della Mozzarella di Bufala Dop, new markets such as China, Lebanon, Singapore, Kuwait, Chile, Peru have also joined, and at Expo Dubai 2021 the sector presented itself with record numbers.
It may have been the cooking shows that flooded the web during these two years of forced closure, but according to the Monitor of Southern Districts, compiled by the Studies and Research Department of Intesa Sanpaolo, among the 15 agri-food districts, at least 13 closed the first half of 2021 with export levels higher than the pre-Covid period. Needless to say, Buffalo Mozzarella from Campania tops the ranking with a +28% compared to the pre-pandemic period and requests from abroad. France is first among them, while requests from China have tripled.
