How to store mozzarella: expert tips
Buffalo mozzarella is a product as good as it is delicate: it is therefore essential that it is stored correctly. Both fresh and commercialized cheese are sold together with the preservation whey, which serves to keep the mozzarella soft and well-hydrated, inside food bags. To further protect it, especially if exposing it to long journeys, we can purchase polystyrene containers and seal them hermetically, inserting the mozzarella without removing it from the original packaging. When it's cold, immerse the mozzarella in a bowl of warm water for 15 minutes, or place the polystyrene container on the radiator: at high temperatures, the product preserves better;

After cutting it, do not put it back in the preserving liquid, but consume it all;

To savor all its fragrance, it is advisable to store mozzarella at room temperature for up to 4-5 days;

Never expose mozzarella to direct sun and never store it in the refrigerator, or freezer, unless you only want to use it for cooking;

The larger its size, the better the dairy product preserves. Aversana, for example, is even better the next day;

If you can't consume it within 4 days, only use it for cooking, making sure to drain it first;
Artisan-prepared mozzarellas are more delicate because they are made with raw milk and pasteurized at lower temperatures, while non-artisan ones are pasteurized at high temperatures and all bacterial load is burned off. This is why the former should be consumed within 3-4 days.
