MYTH #1: Buffalo mozzarella should be stored in the refrigerator

This is probably the false myth that drives true experts the most. 

Buffalo mozzarella must be consumed at a temperature of approximately 18-20°C.

Imagine biting into a mozzarella that has just been taken out of the fridge: its texture is rubbery, the flavor is muted and that magical creaminess that should explode in your mouth... disappears completely.

How to do it then? For food safety specialists, buffalo mozzarella should be stored at room temperature (18-25°) and can remain that way for a few days after its production without any risk of contamination.

Only in summer, when temperatures rise too much, you can use the fridge, but remember: leave it at room temperature for at least 30 minutes before serving it, or immerse it in its packaging for 5 minutes in warm water. The result? The flavor will return to normal!

MYTH #2: Buffalo mozzarella must be consumed on the same day as production

This is one of the most limiting myths about our queen of cheeses: buffalo mozzarella can also be enjoyed in the first days after production, thanks to which it often acquires greater flavor and firmness.

The secret lies in correct conservation: keeping it immersed in its natural serum, at room temperature (18-25°C), away from direct light. In this way it can be preserved perfectly for 2-3 days.

Another factor that greatly influences conservation is the size of the product: a 500g classic mozzarella will be delicious even two or three days later, while cherries or knots tend to deteriorate sooner. 

MYTH #3: Buffalo mozzarella makes you fat and has too much cholesterol

Prepare to revise your beliefs! Buffalo mozzarella has an energy intake of 288 kcal per 100 grams, not much different from fior di latte (250 kcal), and contains only 56 milligrams of cholesterol per 100g.

To give you an idea: the cholesterol content is still lower than that present in meat and eggs. Furthermore, buffalo mozzarella is rich in precious micronutrients such as calcium, zinc, vitamin E, niacin and vitamin B12.

It is no coincidence that it is a must in the diet of many world-famous athletes, from footballers Messi and Boateng to tennis player Roger Federer. The high biological value proteins it contains are essential for those who practice sports!

MYTH #4: Those who are slightly lactose intolerant cannot eat it

False! Bufala mozzarella from Campania has a very low lactose content, between 0.3 and 0.4%.

Although to be considered lactose free, a food must contain less than 0.1% lactose, many people with mild intolerance can digest it without problems. The secret lies in the manufacturing process and in the presence of natural lactic ferments: thanks to these two elements the lactose content is naturally reduced, making this cheese more digestible than you might think.

Obviously, if you have a severe intolerance, always consult your doctor or opt for certified lactose-free versions.

MYTH #5:Buffalo mozzarella is cut with a knife

A mistake that even the most elegant restaurants make: buffalo mozzarella should never be cut with a knife, but tasted in bites!

The reason is scientific: the buffalo mozzarella dough has a spongy structure capable of absorbing the moisture of the whey, which is released during chewing. Cutting it with a knife causes not only the premature leakage of the milk, but also the loss of that characteristic creaminess that makes it unique.

If you really have to cut it for a recipe, use a knife with a thin, very sharp blade, making firm movements without "tearing" the dough.
