Caciocavallo Silano DOP is a semi-hard stretched-curd cheese made from raw cow's milk with rennet, salt, and whey starter. The name comes from the ancient practice of hanging the cheeses in pairs "on horseback" over wooden poles during drying. Aging takes place in controlled environments for at least 30 days.

Recognized as DOP since 1993, it is distinguished by its smooth, straw-colored rind and a compact paste with slight holes. The flavor is initially sweet and delicate, but becomes more intense and slightly spicy with aging, while the texture tends to become softer and flakier.

Per mantenere al meglio le sue caratteristiche, conservare il Caciocavallo Silano DOP in frigorifero, preferibilmente nel reparto meno freddo (circa 8–10°C), avvolto in carta alimentare o in un panno traspirante. Evitare contenitori ermetici, che potrebbero alterarne aroma e consistenza.

Prima del consumo, si consiglia di lasciarlo a temperatura ambiente per almeno 30 minuti, così da esaltarne profumo e sapore. Ottimo sia al naturale che leggermente scaldato, si presta perfettamente anche per essere grigliato o utilizzato in cucina per arricchire numerose ricette.
