Eggplant in Carrozza Recipe
Today, we offer a tasty and simple recipe to prepare, ideal for both a formal dinner and a buffet: eggplant in carrozza. This is a variation of the classic mozzarella in carrozza, where bread slices are replaced with eggplant slices. It’s also an excellent idea for getting children to eat vegetables.
Ingredients for 4 people:
- 3 large eggplants
- 300 gr of buffalo mozzarella
- 150 gr of cooked ham
- 3 eggs
- flour
- breadcrumbs
- salt and pepper
- extra virgin olive oil
PREPARATION
Slice the eggplants into 1-2 cm thick pieces and immerse them in salted water for about an hour, then gently dry them with a cloth. Slice the buffalo mozzarella as well and let it drain. Now take an eggplant slice, place a slice of mozzarella and a slice of cooked ham on top, then another eggplant slice, and press them firmly together. Beat the eggs in a bowl, and in two other bowls, pour the flour and breadcrumbs. Then, coat the vegetables first in flour, then in eggs, and finally in breadcrumbs. Fry the eggplant in carrozza, leaving them in oil for 3-4 minutes per side, until they are golden brown. Then place them on kitchen paper to absorb the oil and serve them hot!
